These might just be up there with the best thing I’ve baked, EVER! You have to try them. Adapted from Zanna Van Dyk’s recipe for Active In Style, I made some absolutely mouth-watering protein brownies with a salted caramel sauce. (P.S. they taste even better than they look!)

 

Brownies:

 

  • 2 eggs
  • 2 super ripe bananas
  • 1/2 cup of ground almonds
  • 1 scoop of chocolate whey protein (I used myprotein)
  • 1/3 cup date syrup
  • 1/3 cup melted coconut oil
  • 1/3 cup of full fat Greek yoghurt
  • A pinch of salt

 

Caramel sauce:

 

  • 3 tbsp date syrup (I used Biona)
  • 3 tbsp melted coconut oil
  • 2 tbsp almond butter  (I used Pip n Nut for its liquid texture)

 

 

The method is quick and simple, just preheat the oven to 180c then combine all of the brownie ingredients together in a bowl (start with the wet ones, then add the dry ones). Once the mixture is smooth, pop it into a lined baking tray and bake for about 15 minutes (or until a fork comes out clean). While they are baking, mix the ingredients for the caramel sauce together and prepare to pour it over the brownies when they come out of the oven… absolutely delicious!
