We thought we’d try something slightly different and post a savoury recipe instead of a sweet one for you to try. This meal is super quick, low in fat and high in nutrition. Here’s what we did:

 

Ingredients:

 

Extra lean beef (400g)

Ginger (thumb sized piece)

Garlic (2 cloves)

Soy sauce (2 tbsp)

Plum sauce (1 tbsp)

Toasted sesame oil (2 tbsp)

Spinach (2 handfuls)

Rice noodles (200g)

 

Method:

 

Cook the noodles according to the packet’s instructions. Cut the beef into thin strips and set aside. Chop up the garlic and ginger nice and small. Pop the sesame oil in a pan on high heat. Add the garlic and ginger and leave to fry for a minute. Add the beef strips.

 

While the beef is cooking, grab a small bowl and mix the plum and soy sauces together. Once the beef has been cooking for a couple of minutes, add the sauce.

 

Leave to cook for a further 5 or 6 minutes then add the spinach and cook for one more minute.

Drain the noodles and plate them up with the beef.

 

And there you go! A 15-minute super healthy meal, perfect for a cold autumn evening. Add a handful of cashew nuts to give it some crunch or use tofu instead of beef for a veggie version. Let us know if you try it.
